There is a restaurant in Nice, France called 「Oliviera」. They use fresh local ingredients. When you make an order the owner brings out the meals. He explains enthusiastically, “On this salad there is this olive oil, on the steak tartare I use this olive oil.” After we were finished with the food he asked, “What about desert? We have tiramisu.” He brought one to the table and told us to eat it by itself first, then put on this olive oil. The tiramisu by itself is delicious but with the olive oil it was such a different experience. It was honestly the best tiramisu I have ever eaten!
