This summer, I had this amazing cilantro salad at OREN in London, and I couldn’t stop thinking about it. When I got back to New York, I started making it often at home.
The one I had there had cilantro, juicy cherries, almonds, and Turkish chili peppers. At first, I tried to copy it exactly, but once summer ended and cherries got harder to find, I started using nectarines instead. I also switched out the almonds for walnuts because almonds felt a bit too hard for my teeth.
Now I am making it with cilantro, nectarines, walnuts, olive oil, lemon juice, salt, and pepper. While making this salad, I often find myself thinking about how much I’d love to go back to London and have fish and chips again.
